Japanese says “bareisho”. Also known as “Jagaimo”.
It is another name for potato, and it is taken from Chinese, and it seems that potato refers to hodoimo of the legume family in China. In 1808, the scholar Ono Ranzan explained that “Bareisho is a potato”, and it seems that Bareisho came to be called potatoes.
Potatoes prefer cool climates, and the optimum growing temperature is 15°C to 21°C. In the long north-south Japanese archipelago, it is cultivated everywhere throughout the year due to the cool climate. The main edible varieties in Japan are ‘May Queen’ and ‘Baron’. These two varieties have a sticky texture that prevents the May Queen from falling apart while the baron has a contrasting characteristic of fluffy flour.
